CwM: Nonie's Blueberry Pudding

 



My berries were picked on the shores of the lake by my family cottage and on the hillside overlooking the lake 


Crusty sugary crust on top, cake-like topping with a thick and flavorful deep blue base of blueberries in a rich syrup, this is a favorite on our cove of the lake. Often served hot with ice cream, it's also delicious cold.  I find it's perfect to put into the oven just as we are all sitting down to dinner; it comes out of the oven one hour later -- perfect timing! 

Basic Recipe: 

2 C blueberries  (though it works well with apples and with strawberries! 

Sprinkles of cinnamon  (if strawberries, use almond extract instead)

Dribbles of lemon juice

2 cups Sugar, divided into 2x 1 C

1 C flour

3T butter

1/2 C milk

Sprinkling of salt

1 large t of baking powder

1 large t of cornstarch (but I didn't use this... the result is simply some runny blueberry sauce)

1 Cup rolling boiling water

Directions: 

Place cleaned and sorted blueberries into pan. Sprinkle with lemon juice and cinnamon.  In a separate bowl, cream butter and  1 C sugar. Add milk, stir.  Add flour, baking soda, salt. Stir well.   Smooth evenly over the blueberries. Do not stir.  Sprinkle remaining 1 C sugar (with cornstarch to help make blueberry part thicker) evenly on top. Do not stir.  Pour the boiling water over the top; do not stir.  350 oven, 1 hour. 

This is my mom's recipe, made famous by her at a variety of dinners with friends in our cove of the lake in Maine.  Crusty on the top, soft cake in the middle, and blueberry pie- like in the bottom, and calling for half the blueberries as a pie, we've enthusiastically looked forward to this dish all winter. We pick the blueberries on Henry's Hill, Center Hill, Mount Bald, and in front of our cabin on Lake Webb. 

This year, I made it with apples and it was marvelous.  I still used cinnamon and lemon to flavor it, and that worked well.  Maine had a bumper crop of strawberries this year, so I made this dish with strawberries, but added almond extract and left out the cinnamon (Wonderful!). I've also "forgotten" the milk sometimes (for my lactose intolerant friends) and skimped on the berries (when we didn't quite pick enough) and it's ok.  This is a desert to love and to enjoy especially for the speed of preparation!
